Ingredients:

- 200g rice noodles

- 1 block firm tofu, cubed

- 2 tbsp vegetable oil

- 3 cloves garlic, minced

- 1 cup bean sprouts

- 1 carrot, julienned

- 1 red bell pepper, sliced

- 2 green onions, chopped

- 1/4 cup crushed peanuts

- Lime wedges for serving

 

For the Sauce:

- 3 tbsp soy sauce

- 2 tbsp tamarind paste

- 2 tbsp maple syrup

- 1 tbsp rice vinegar

- 1 tsp chili flakes (optional)

 

Instructions:

1. Cook the rice noodles according to the package instructions. Drain and set aside.

2. In a small bowl, whisk together the sauce ingredients.

3. Heat the vegetable oil in a large pan over medium-high heat. Add the tofu cubes and cook until golden brown. Remove from the pan and set aside.
